There is always a conflict between winemaking and accounting (even if they are done by the same person!).  Winemaking wants to make adjustments when it is best for the wine, or most convenient for cellar operations.  Accounting wants to do anything that costs money as late as possible.  These are often NOT compatible needs to say the least.
